Christmas is just around the corner. With just 3 days left, people are busy preparing for different Christmas which they can prepare for their family and friends. The festival has become widely celebrated in past few years and it is the right time to enjoy holidays as well.

Moreover. here are some interesting and simple Christmas recipes and ideas which can be kept handy. Likewise, some of the well-known chefs like Nigella Lawson, Delia Smith, and Jamie Oliver.

Delia Smith’s Sausage Rolls

Delia Smith calls this recipe after her mom as Etty’s Sausage Rolls. Turning a bit emotional, she shares that Christmas recipes cannot be complete without her mother’s authentic dish. She also adds that the sausage rolls can be teamed up with drinks or even with celery to make a quick snack. Moreover, if people do not have sufficient time at hand they can cook this recipe in advance and the freeze it.

The recipe for Etty’s Sausage Rolls requires the following ingredients:

Things Required for Flaky Pastry

  1. 75gms of block butter
  2. 110gms of plain flour
  3. pinch of salt
  4. Cold water for mixing

Things Required for Making the Filling

  1. 225gms of pork sausage meat
  2. ½ medium or 1 small finely chopped onion
  3. 2 tablespoons chopped sage leaves
  4. Salt and black pepper
  5. 1 beaten egg

Method of Cooking Flaky Pastry

Take the butter out of the fridge and wrap it in a foil. Place it in the fridge again for 45 minutes.

In the next step, sift flour and salt in a bowl. Now take butter from the freezer and grate it in the bowl. Mix all the ingredients with a spoon

Sprinkle a tablespoon of cold water and keep on mixing without using hands. Keep sifting until the flour comes clean of the bowl.

Now pop in a polythene bag and chill for about 30 minutes before using.

Steps for rolling the pastry:

Before the pastry rests, pat it into a round shape.

Then, place the rested dough on a lightly floured surface. Now, use the rolling pin that is absolutely straight.

Lightly dust pin with flour. Rest it on the center of the dough. Place the flat of your hands lightly on each end of the pin and begin to roll the dough backwards and forwards.

It will roll out into a round shape and will keep its shape. It will not shrink as it cooks.

Method for making the filling

Mix sausage meat, onion, sage and seasoning together in mixing bowl.

Divide it into two and roll each piece with your hands on lightly floured surface to 30cm long.

Put them on a tray and roll out the pastry.

Preheat oven to 220C, Gas mark 7. Roll out the pastry to form an oblong approximately 30 x 20cm.

Now cut this oblong into two strips 30 x 10cm. Then divide sausagemeat also into two. This makes two long rolls the same length as the strips of pastry.

Place one roll of sausage meat onto one strip of pastry. Brush the beaten egg along one edge. Likewise, fold the pastry over and seal it as carefully as possible.

Roll the whole thing over and repeat with the second piece of pastry and sausagemeat. Then use a small sharp knife to cut each roll into six sausage rolls, each about 5cm long.

Place rolls on baking sheet. Bake high in the oven for 20-25 minutes. Then remove them to a wire rack to cool.

Gordon Ramsay’s Tip

To speed up the cooking of each sprout, Gordon Ramsay says that people criss-cross them. This, in turn, speeds up cooking but it leaves behind floating mush. Instead, it is better to par boil them a day before. And then use them when required along with chestnut, garlic, and rosemary.

Jamie Oliver tells over his cumin carrots. He says that put the carrots into a saucepan. Put water and then add tbsp of sugar, butter and pinch of salt. Cook the carrots till they turn tender. Later on, sprinkle some cumin and put some butter to serve.
